Wayne County currently requires a Certified Food Manager in
each “fixed” food establishment. The Certified Food
Manager is an individual who has successfully completed a course
that has been approved by the Michigan Department of Agriculture,
thereby proving their knowledge of food service sanitation.
Topics such as sanitation and bacteriology are introduced together
with many of the items that are routinely monitored during
a health inspection. The Certified
Food Manager is a liaison between the food service employees and the Health Department.
They are the one responsible for instructing and educating their staff to maintain
a high level of cleanliness and sanitation. A Certified Food Manager must work
at least 20 hours per week in the facility for which he or she is certified.
The Certified Food Manager Course is offered
through the Environmental Health Division as a convenience to
food service operators.

This certification must be renewed every five
years, so the Wayne County Health Department has initiated a
one day re-certification
class. Information on the
requirements, price, curriculum, and class dates for the Re-certification Class

Individuals who became certified through the
Wayne County CFM Course more than 5 years ago and have lost their
CFM certificate
can pay for and receive a replacement
certificate that is good for one year. This certificate is not renewable. In
order to maintain their status as a Certified Food Manager, a person must take
either a full certification course or a renewal course within that one-year grace

As an added benefit to those individuals who have become certified
through Wayne
County’s courses, we offer free Employee Training Sessions on food safety.
These training sessions allow additional food service employees to gain basic
food safety knowledge.
